Senatore Cappelli Wheat
Senatore (sen-ah-tor-eh) Cappelli is a durum wheat variety native to Italy, grown in our province of Foggia. It is named after Senator Raffaele Cappelli, one of the political champions for agricultural reform in the 1900s. Flour made from Senatore Cappelli wheat exhibits much higher fiber, polyphenols, nutrients and protein content than standard commercial wheat and flour. Maybe most important to Americans, the “gluten effect” is greatly minimized after consuming products made from this pre-industrial variety, making it more digestible than most commercial pastas (note: while beneficial for gluten sensitivities, still not suitable for persons with a celiac diagnosis). And finally, Senatore Cappelli also exhibits a lower glycemic index.
